Fermentation is a tasty, fast and easy way to preserve vegetables. There are a ton of vegetables that ferment very well. I would advise putting in grape leaves if you want them to remain crunchy. In the center of the top photo is beet wine. It was more of an experiment. I think it came out well though and I will probably make it again, but I like beets a lot and it definitely tastes like beets. Most vegetable fermentations are considered healthy probiotics, but I really just do it for the taste.
