Wild Mushroom & Pistachio Pesto Pastamakes 2 servingsyou will need:3 king oyster mushrooms – sliced1 cup dried matsutake mushrooms – soaked1 tsp coconut oilhandful of pasta2-4 tbsp pistachio spinach pesto1/3 cup pasta cooking watersalt & pepper to tasteassembly:Cook your pasta according to directionsIn a large frying pan heat coconut oil over medium high heat – saute mushrooms until golden brown.Add cooked pasta directly to the frying pan – turn heat off. Toss 2-4 tbsp of pesto plus 1/3 cup of pasta water with the pasta and mushrooms, tossing well to coat noodles and mushrooms.Divide between 2 plates and season with salt & pepper to taste.

This is a carving my father-in-law did it has nothing to do with mushrooms or foraging, but I just like it a lot.
The rain is so bad. I can’t go out hiking today.So I looked back in my journal the oyster mushrooms came out the same time last year almost to the day. I looked to see what comes out next and it looks like it will be Berkeleys Polypore. Last year they were huge and everywhere. This is a picture of one that I ended up taking home for the dinner table. I’m betting they’ll start popping up Thursday or Friday.
